Baked Lemon Salmon: Quarantine Cooking Series

Hi Foodies,


We're back with another recipe! We hope everyone is staying safe during these uncertain times. With quarantine in full swing, we figured we could share some quick and easy recipes we were going to feature as part of our cookbook that you can easily make at home.


For our second recipe in this series, we have a recipe for a tasty baked salmon with a seasoning that will leave you asking for more.


Time: 10 - 15 minutes


Ingredients:

  • ¼ piece of salmon

  • 4 tablespoons of oil (any type)

  • 5 cherry tomatoes or ½ a regular tomato

  • ¼ an onion (if you prefer)

  • 1 tablespoon of Salt

  • 1 tablespoon of mixed spice or black pepper

  • 1 lemon


Steps:


  1. Preheat the oven to 350 degrees. Get a pan and take out a sheet of aluminum foil.

  2. Place the salmon on top of the foil and mix in 4 tbsp of oil, 1tbsp of salt and mixed spice.

  3. Cut the cherry tomatoes in half and place some below and on top of the salmon. Do the same with the onion.

  4. Cut a lemon in half. Use ½ as the juice to marinate the salmon and slice the other half into many small pieces. Once again place some of the slices below and on top of the salmon

  5. Wrap the aluminum foil until it fully covers the salmon and place it in the oven for 10 -12 minutes.

  6. If you prefer, take out the salmon from the over, and remove the top of the aluminum foil to have it slightly crisp the top
